The Devastating Fire of 1996...
Brother Sebastian's burned to the ground in February of
1996. The exact cause of the fire was never determined.
The final demolition of the original structure and subsequent rebuilding began
immediately under the direct supervision of owner Loren Koch.
Construction was completed, and the restaurant re-opened in
October of the same year - only 8 months later!

Who is Brother Sebastian?
Brother Sebastian, in our case, is a purely fictional character. We have learned
there is an actual "Brother Sebastian" in the Omaha area, but we have not had
the pleasure of meeting him. What is the
story of Brother Sebastian's? Owner Loren Koch was
inspired by the many Spanish missions sprinkled throughout the state of
California. The monks that inhabited these monasteries were renowned for their
hospitality and kindness to visitors. They were also the original "vintners" of
California, being the first in the state to plant vines brought from their
homeland. Koch designed Brother Sebastian's to re-create the warm ambiance of
the rustic abbeys, while paying homage to the "Brothers" that dedicated their
lives to their beliefs - as well as to the care of their fellow man. |

In the know...
Omaha beat out Chicago as the largest beef producing city in the world in 1956.
The Omaha Stockyards processed 43,000 cattle a day at it's peak, but fell victim
to the developement of large beef packing companies in the 1970's. The face of
meat processing has changed over the last three decades, but Nebraska still
reigns as one of the premier beef producing states in the country.
Nebraska Beef is a brand now recognized as providing some of the worlds
finest beef products.
